Beans are so delicious, nutritious and versatile that they’re the focus of dinners at my house at least a couple of times a week. Browsing through a favorite cookbook, I landed on a recipe I knew I wanted to try: quinoa – sweet potato peanut stew, from Gluten-Free Girl Every Day by Shauna James Ahern (www.glutenfreegirl.com).
The stew is subtly flavored with surprising spices. Appealing color variation is delivered by a combination of tomato, black beans, (off) white sweet potato (not orange yam) and fresh cilantro. Served over quinoa, this makes a fabulously nutritious, delicious, gluten-free meal.
